Bring a large pot of salted water to a boil. Cook the fettuccine according to package directions until al dente. Reserve 1 cup of pasta water before draining.

While the pasta cooks, season the chicken pieces with garlic powder, onion powder, dried oregano, salt, and black pepper.

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

Add the sliced mushrooms to the same skillet and cook until softened and lightly browned, about 5-7 minutes. Remove mushrooms from the skillet and set aside with the chicken.

Reduce heat to medium. Add butter to the skillet and melt. Add minced garlic and cook for 1 minute until fragrant.

Whisk in the flour and cook for 1 minute, stirring constantly, to create a roux.

Gradually whisk in the chicken broth, then the heavy cream, stirring until the sauce thickens slightly, about 3-5 minutes.

Stir in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, add a splash of the reserved pasta water until desired consistency is reached.

Return the cooked chicken and mushrooms to the skillet with the sauce. Add the drained fettuccine and toss to combine, ensuring all ingredients are coated in the creamy sauce.

Serve immediately, garnished with fresh chopped parsley and extra grated Parmesan cheese, if desired.
