Line a baking sheet with parchment paper. Set aside.

In a food processor or high-speed blender, combine the 1 1/4 cups of whole pecans, pitted dates, ground cinnamon, and vanilla extract. Process until the mixture comes together and forms a cohesive, crumbly dough that sticks when pressed between your fingers.

Scoop out small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter. Place the rolled bites onto the prepared parchment-lined baking sheet.

Transfer the baking sheet with the pecan pie bites to the freezer and chill for at least 30 minutes, or until firm.

While the bites are chilling, melt the dark chocolate. You can do this in a microwave-safe bowl in 30-second intervals, stirring between each, or over a double boiler until smooth.

Once the bites are firm, remove them from the freezer. Dip each bite into the melted dark chocolate, ensuring it's fully coated. Allow any excess chocolate to drip off.

Immediately after dipping, sprinkle the top of each chocolate-covered bite with the reserved 1/4 cup of chopped pecans. Place them back on the parchment-lined baking sheet.

Return the finished bites to the freezer for another 5-10 minutes to allow the chocolate to set completely. Serve chilled and enjoy!
