In a medium bowl, combine the soy sauce, rice vinegar, toasted sesame oil, minced garlic, grated ginger, and honey. Whisk thoroughly until all ingredients are well combined.

Place the beef back ribs onto the prepared oven pan. Pour the Asian marinade evenly over the ribs, ensuring they are well coated.

Cover the pan tightly with another sheet of aluminum foil, or use the overhang from the bottom sheet. Crimp and fold the edges securely to create a tight seal, preventing any steam from escaping during baking. This helps to tenderize the ribs.

Bake the covered ribs in the preheated oven for 3 hours. There is no need to flip or baste during this time.

Carefully remove the pan from the oven. Remove the top layer of aluminum foil. The ribs should be very tender and easily pull apart.
