Prepare the beef by thinly slicing the 1 pound ribeye steak against the grain. Place the sliced steak into a large mixing bowl.

Add all the marinade ingredients to the bowl with the steak: 4 tablespoons soy sauce, 2 tablespoons gochujang, 2 tablespoons brown sugar, 4 teaspoons rice vinegar, 4 teaspoons sesame oil, 4 minced garlic cloves, 4 teaspoons grated ginger, and 1 grated Korean pear.

Mix all ingredients thoroughly with your hands to ensure the beef is evenly coated. Cover the bowl and marinate the beef in the refrigerator for at least 30 minutes.

Heat a large pan or wok over medium-high heat. Add 3 tablespoons of neutral oil to the hot pan.

Once the oil is shimmering, add the marinated beef to the pan in a single layer, working in batches if necessary to avoid overcrowding. Cook until the beef is browned and cooked through, about 3-5 minutes per batch. Remove cooked beef and set aside.

Return all the cooked beef to the pan. Add the 2 packs of instant noodles to the pan. Pour in enough water to just cover the noodles.

Open the seasoning packets from the instant noodles and sprinkle their contents over the noodles and beef in the pan.

Stir well to combine the noodles, beef, and seasoning. Cook until the noodles are tender and most of the water has been absorbed, about 3-4 minutes.

Add the 2 chopped green onions, 1/3 cup shredded carrots, and 1/3 cup kimchi to the pan. Mix all the ingredients thoroughly until well combined and heated through.

Serve the beef bulgogi noodles immediately in individual bowls. Garnish with sesame seeds before serving.
