In a bowl, mix together the soy sauce, sugar, minced garlic, sesame oil, roasted sesame seeds, and finely chopped serrano pepper. Set the sauce aside while you cook the noodles.

Bring a pot of water to a boil, then add the somyeon noodles. Cook for about 3.5–4 minutes, or according to package instructions. If the water starts to bubble up too much, add a small splash of cold water to bring it back down.

Drain the noodles and rinse them really well under cold water until they feel cold and chewy. Use your hands to gently rub the noodles together while rinsing to remove extra starch. This helps keep them from getting gummy.

Divide the cold noodles between 4 bowls. Spoon the sauce over the noodles and mix. The sauce is meant for 4 servings, but you can use less if you prefer your noodles less saucy.

Top with crushed roasted seaweed, give everything a good mix, and serve right away so the noodles stay chewy. Pair with protein of choice (if you want).
