Place the flat iron steak in a bowl. Drizzle olive oil over the steak. Squeeze the juice from half a lime over the steak. Season generously with chili powder, cumin, paprika, garlic powder, salt, and black pepper. Rub the marinade thoroughly into both sides of the steak. Cover the bowl and let the steak marinate for at least 30 minutes, or up to overnight for best flavor.

Cut the corn kernels off two cobs (or measure out frozen/canned corn) and place them in a mixing bowl. Add mayonnaise, sour cream, crumbled Cotija cheese, a dash of chili powder, chopped cilantro, and the juice from half a lime to the bowl with the corn. Mix all ingredients thoroughly until well combined.

Place the cooked rice in a separate bowl. Squeeze the juice from half a lime over the rice. Add chopped cilantro to the rice. Mix well to combine all ingredients.

Heat a pan (a cast iron pan is recommended) over high heat until very hot. Once the pan is hot, place the marinated flat iron steak in the pan. Sear the steak for 3 to 4 minutes per side for a medium-rare doneness. Adjust cooking time for desired doneness. Remove the steak from the pan and let it rest for a few minutes on a cutting board.

Slice the rested steak against the grain into thin strips.

To assemble the bowls, take a serving bowl and add a base layer of the prepared cilantro lime rice. Arrange the sliced flat iron steak on top of the rice. Add a generous dollop of the elote dip next to the steak. Garnish the bowl with slices of fresh avocado, additional chopped cilantro, and a lime wedge.
