Season the chicken pieces with garlic powder, onion powder, dried Italian seasoning, salt, and black pepper. Toss to coat evenly.

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, or until browned and cooked through. Remove chicken from the skillet and set aside.

While the chicken cooks, bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain, reserving 1/2 cup of pasta water.

In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant. Stir in chicken broth, heavy cream, and red pepper flakes (if using). Bring to a gentle simmer.

Reduce heat to low and stir in the grated Parmesan cheese and chopped sun-dried tomatoes. Cook, stirring occasionally, until the sauce thickens slightly, about 3-5 minutes.

Add the fresh spinach to the sauce and cook until wilted, about 2-3 minutes.

Return the cooked chicken to the skillet with the sauce. Add the cooked and drained pasta. Toss everything together until well combined. If the sauce is too thick, add a splash of the reserved pasta water until desired consistency is reached.

Serve immediately, garnished with fresh chopped basil and extra grated Parmesan cheese, if desired.
