In a medium bowl, combine the chicken strips with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and 1/2 teaspoon sesame oil. Mix well and set aside to marinate while you prepare other ingredients.

If using dried chow mein noodles, cook them according to package directions until al dente. Drain well and rinse with cold water to prevent sticking. If using fresh noodles, you may only need to blanch them briefly.

In a small bowl, whisk together the chicken broth, 2 tablespoons soy sauce, oyster sauce, dark soy sauce (if using), granulated sugar, white pepper, and 1 teaspoon cornstarch until smooth. Set aside.

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the marinated chicken and stir-fry until cooked through and lightly browned, about 3-5 minutes. Remove the chicken from the wok and set aside.

Add the remaining 1 tablespoon of vegetable oil to the wok. Add the minced garlic and grated ginger and stir-fry for 30 seconds until fragrant.

Add the sliced yellow onion, julienned carrots, and sliced celery to the wok. Stir-fry for 3-4 minutes until the vegetables start to soften.

Add the shredded cabbage to the wok and continue to stir-fry for another 2-3 minutes until the cabbage is slightly wilted.

Return the cooked chicken to the wok. Add the cooked chow mein noodles and the prepared sauce mixture. Toss everything together vigorously to ensure the noodles and vegetables are evenly coated with the sauce.

Add the bean sprouts and continue to stir-fry for 1-2 minutes, until the sprouts are heated through but still crisp.

Serve immediately, garnished with sliced green onions.
