Preheat a large skillet or frying pan over medium heat. Add the bacon slices and cook until crispy, about 8-10 minutes, flipping occasionally. Remove the bacon from the pan and place on a plate lined with paper towels to drain. Reserve 1 tablespoon of bacon fat in the skillet.

While the bacon cooks, prepare the avocado. Halve the avocados, remove the pits, and scoop the flesh into a medium bowl. Mash with a fork until chunky. Stir in the lime juice, salt, and black pepper. Set aside.

In the same skillet with the reserved bacon fat, add the butter and melt over medium-low heat. Crack the eggs into the skillet, being careful not to break the yolks. Cook for 3-5 minutes for sunny-side up eggs, or longer if you prefer firmer yolks. Season with salt and pepper.

To assemble the stacks, divide the mashed avocado mixture among four plates, forming a base for each stack. Top each avocado base with two slices of crispy bacon.

Carefully place one cooked egg on top of the bacon on each stack. Garnish with halved cherry tomatoes and chopped fresh cilantro. Serve immediately with hot sauce, if desired.
