Bring a large pot of heavily salted water to a boil. Add the penne (or your chosen short pasta) and cook until al dente according to package instructions.

While the pasta cooks, heat the olive oil in a large pan over medium heat. Add the finely chopped garlic and sauté for about 30 seconds until fragrant.

Add the tomato paste, oregano, chilli flakes, and paprika to the pan. Cook for 2–3 minutes, stirring continuously to allow the tomato paste to caramelize slightly and deepen in flavour.

Pour in the vodka and hot water to deglaze the pan. Let it simmer for a couple of minutes to cook off the alcohol and slightly reduce the sauce.

Lower the heat and stir in the cream, allowing the sauce to simmer gently on low heat.

Add the freshly grated Parmesan cheese and a pinch of salt. Stir until the sauce becomes smooth and creamy.

Once the pasta is al dente, transfer it directly into the sauce along with a splash of pasta water. Toss everything together until the pasta is evenly coated and the sauce becomes glossy.

Plate the pasta and top with chopped chives, a whole burrata, and a drizzle of spicy chilli oil if desired. Serve immediately.
