In a small bowl, combine the granulated sugar and the zest from 4 limes.

Using your fingers, massage the sugar and lime zest together until the sugar is fragrant and the zest is evenly incorporated.

To a small saucepan, add the pitted and halved cherries, the prepared sugar and zest mixture, and 1 cup of water. Place the saucepan over medium-low heat.

Cook the mixture over medium-low heat, allowing it to simmer for 10 to 15 minutes. During this time, the cherries will soften and begin to break down. Mash the cherries occasionally throughout the cooking process using a wooden spoon or a similar utensil to help release their juices.

Carefully strain the cooked syrup through a fine-mesh sieve into a clean bowl, separating the liquid from the solids. Use a spatula or spoon to press down on the solids in the sieve to extract as much liquid as possible.

Transfer the strained syrup to the refrigerator and allow it to cool completely. This will take at least 1 hour.

Once the syrup is thoroughly cooled, squeeze in the fresh juice from the zested limes. Stir well to combine.

To assemble your soda, fill a glass with ice. Add approximately 1/4 to 1/3 cup of the cooled cherry lime syrup to the glass. Adjust the amount of syrup based on your preferred sweetness level.

Top the syrup and ice with sparkling water. Stir gently and enjoy your homemade cherry lime soda!
