Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper.

In a large mixing bowl, combine the almond flour, cottage cheese, eggs, baking powder, shredded mozzarella or cheddar cheese, and salt.

Mix all the ingredients together with a spatula or your hands until a cohesive dough is formed. Ensure all ingredients are well incorporated.

Using a standard cookie scoop (approximately 2 tablespoons per scoop), portion out about nine biscuits onto the prepared baking sheet. Arrange them with some space in between.

Gently flatten each scooped biscuit dough with the bottom of a measuring cup or your palm to form a disc shape, about 1/2 inch thick.

Bake the biscuits in the preheated oven for 20 minutes, or until they are golden brown on the outside and cooked through. The center should be moist.

Remove the biscuits from the oven and let them cool slightly on the baking sheet before serving.
