Pour 150 grams of runny honey into a metal bowl.

Whisk the runny honey with an electric whisk until it thickens to a thick consistency. This should take approximately 5 minutes.

Add 20 grams of good quality instant coffee to the thickened honey mixture.

Add 50 ml of hot water to the mixture.

Continue to whisk the mixture with the electric whisk for a further 5-10 minutes until it is thickened and looks like a light brown, creamy whipped mixture.

For an optional final touch, grate dark chocolate directly into the whipped honey coffee mixture.

Mix the grated dark chocolate into the whipped coffee mixture.

Place scoops of vanilla ice cream into individual serving glasses.

Spoon the whipped honey coffee mixture generously over the ice cream.

Garnish with additional dark chocolate shavings on top, if desired, before serving immediately.
