Prepare the garnish by slicing two prickly pear fruits in half, then cut each half into thin slices suitable for rimming a glass. Set aside.

Into a cocktail shaker, pour the Waterloo Prickly Pear & Rose Gin and fresh lime juice.

Fill the cocktail shaker with a generous amount of ice cubes.

Secure the lid on the cocktail shaker and shake vigorously for about 15-20 seconds, until the shaker is well chilled.
Fill four tall glasses with fresh ice cubes.

Using a cocktail strainer, strain the contents of the shaker evenly into the four ice-filled tall glasses.

Top each drink with 90 ml of sparkling water or soda water.

Drizzle 15 ml of prickly pear syrup over the ice in each glass. This will create a beautiful layered effect as it sinks.

Garnish each Prickly Collins with a slice of the prepared prickly pear fruit on the rim of the glass.

Add a lemon twist or peel next to the prickly pear slice on the rim of each glass for an aromatic finish. Serve immediately.
