Cut 100g of green onion into 5cm segments, separating the white and green parts. Cut 100g of onion into thin slices.

Heat 100ml of cooking oil in a pan over low heat. Add the white parts of the green onion and the sliced onion to the pan. Fry them until they are fragrant and golden brown. This should take about 8-10 minutes. Remove the fried white green onion and onion from the oil and set aside. Add the green parts of the green onion to the same oil in the pan. Fry until they are crispy, about 3-5 minutes. Remove the crispy green parts of the green onion from the oil and set aside.

To the remaining oil in the pan, add 2 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, and 1 teaspoon of sugar. Stir the mixture well and bring it to a boil. Set the sauce aside.

Bring a pot of water to a boil. Add 200g of noodles to the boiling water and cook until they are al dente, following the package instructions, typically 2-4 minutes.

Drain the cooked noodles thoroughly. Transfer the noodles to a serving bowl. Pour the prepared scallion oil sauce over the noodles. Garnish with the crispy green onion and fried onion saved from Step 2. Mix well before serving.
