In a large bowl, combine the peeled and cut sweet potato fries. Drizzle with olive oil and toss to coat evenly. If using, sprinkle with cornstarch and toss again until the fries are lightly coated.

Add the kosher salt, black pepper, paprika, and garlic powder to the bowl with the sweet potatoes. Toss thoroughly to ensure all fries are well-seasoned.
