Line a small baking tray or loaf pan with parchment paper.

Blend the cottage cheese until smooth. For the smoothest texture, ensure it is completely blended.

In a bowl, mix the blended cottage cheese, large egg, shredded mozzarella cheese, optional garlic powder, and optional pinch of salt until fully combined.

Spread the mixture evenly onto the prepared baking tray or loaf pan into a rectangle about 1/4 inch (6 mm) thick.

Bake for 18–22 minutes, or until the base is golden brown and firm around the edges.

Remove the baked base from the oven and let it cool for 2–3 minutes.

Slice the baked base into 6–8 breadsticks.

For extra crispiness, return the sliced breadsticks to the oven and bake for an additional 3–5 minutes.

Serve the breadsticks warm, garnished with Italian seasoning or parsley if desired. They pair well with marinara sauce, garlic butter, ranch dressing, or pizza sauce.
