Wrap the 3 cups of curd in a muslin cloth and hang it for a few hours until all the water is drained. This process will yield 1 1/2 cups of thick hung curd.

In a mortar and pestle, add the kesar strands and pound them well.

Add the warm milk to the pounded saffron strands and stir well to create kesar milk.

In a mixing bowl, combine the hung curd, kesar milk, condensed milk, fresh cream, and cardamom powder.

Whisk the mixture thoroughly until it is smooth and no lumps remain.

Transfer the whisked mixture into an earthen pot.

Cover the earthen pot tightly with aluminum foil.

Add water to the bottom of your air fryer basket.

Place the air fryer tray inside the basket.

Carefully place the covered earthen pot on the tray inside the air fryer.

Air fry at 150°C for 10-12 minutes.

Once air-fried, refrigerate the Kesar Bhappa Doi for 2-3 hours.

Serve chilled.
