Preheat your oven to 350°F.

Take a mini muffin tin. Place a small amount of the shredded cheese (about 1/2 tablespoon per cup, enough to cover the bottom) into 6 of the muffin cups. This will be the base for your bites.

Place the muffin tin with the cheese bases into the preheated oven for about 4 minutes, or until the cheese is melted and slightly crispy around the edges.

While the cheese is melting, prepare the chicken mixture. In a mixing bowl, combine the shredded rotisserie chicken, softened cream cheese, buffalo wing sauce, and ranch seasoning mix. Mix all ingredients thoroughly until well combined.

Once the melted cheese bases are ready, carefully remove the muffin tin from the oven and let it cool for a couple of minutes. Then, spoon about 1 tablespoon of the buffalo chicken mixture into each of the 6 muffin cups, gently pressing it down onto the melted cheese base.

Sprinkle the remaining shredded cheese over the top of each chicken bite in the muffin tin.

Return the muffin tin to the oven and bake for an additional 10 minutes, or until the cheese on top is melted and bubbly and the bites are heated through.

Carefully remove the mini buffalo chicken bites from the muffin tin and place them on a plate to cool slightly. Serve warm, optionally with a side of ranch dressing for dipping.
