Preheat your oven to 400°F. Have a medium-sized baking dish (approximately 9x13 inches) ready.

Place the cherry tomatoes and unpeeled garlic cloves into the baking dish. Add the fresh thyme sprigs.

Drizzle the olive oil generously over the tomatoes, garlic, and herbs. Season with kosher salt and freshly ground black pepper, tossing gently to coat everything evenly.

Bake in the preheated oven for 20-25 minutes, or until the cherry tomatoes are blistered, softened, and have released their juices. The garlic should be tender.

Carefully remove the hot baking dish from the oven. Discard the thyme sprigs if desired, or leave them for presentation.

Carefully place the whole balls of burrata cheese directly on top of the hot roasted tomatoes. The heat from the tomatoes will begin to warm and soften the burrata.

Garnish generously with fresh basil leaves. If desired, drizzle with a little more olive oil.

Serve immediately with crusty bread for dipping into the flavorful tomato juices and creamy burrata.
