Season the chicken thighs on both sides with garlic powder, onion powder, salt, and black pepper.

Heat olive oil in a large pan or Dutch oven over medium-high heat.

Sear the seasoned chicken thighs for 3 to 4 minutes per side, until golden brown. Remove the chicken from the pan and set aside.

Add the sliced shallot, minced garlic, and sliced red chili to the same pan. Sauté for 1 minute, scraping up any browned bits from the bottom of the pan.

Pour in the full-fat coconut milk.

Add the grated fresh ginger, sweet chili sauce, soy sauce, fish sauce, lime juice, and brown sugar to the pan. Stir well to combine all ingredients.

Return the seared chicken thighs to the pan, nestling them into the sauce.

Cover the pan, reduce the heat to low, and simmer for 15 to 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Garnish with fresh cilantro before serving.
