Preheat your oven to 190°C (375°F).

Cut the broccoli into small florets. Bring a pot of salted water to a boil and add the broccoli. Boil for 2-3 minutes until slightly tender but still firm.

Drain the broccoli very well, ensuring any excess water runs off. You can gently press it to remove more moisture.

Line a baking dish with parchment paper and spread the drained broccoli evenly across the bottom.

Crack the eggs directly over the broccoli in the baking dish. Season generously with salt and black pepper. Gently mix everything together in the dish to distribute the eggs and seasoning.

Sprinkle the grated mozzarella evenly over the top of the broccoli and egg mixture.

Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the eggs are set and the cheese is melted and lightly golden brown.

Remove the casserole from the oven, let it cool for a few minutes, then cut into portions and serve immediately.
