Bring a large pot of salted water to a rolling boil. Add the rigatoni pasta and cook according to package directions until al dente. Drain the pasta and set aside.

In a medium bowl, season the cubed chicken breast with 1 teaspoon of Cajun seasoning, 1/2 teaspoon of Italian seasoning, 1/2 teaspoon of onion powder, 1/2 teaspoon of garlic powder, 1/4 teaspoon of paprika, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Toss to coat evenly.

Heat 1 tablespoon of vegetable oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until golden brown on all sides and cooked through, about 5-7 minutes. Remove the cooked chicken from the pan and set aside.

Add the sliced smoked sausage to the same pan (add a little more oil if needed). Cook until crispy and browned, about 5-8 minutes. Remove the cooked sausage from the pan and set aside with the chicken.

Reduce the heat to medium. Add the chopped onion, green bell pepper, red bell pepper, and celery to the pan. Sauté the vegetables, stirring occasionally, until softened, about 5-7 minutes.

Add the minced garlic to the pan with the softened vegetables and cook for 1 minute until fragrant.

Pour in the undrained canned diced tomatoes, chicken broth, and heavy cream. Stir in the remaining 1 teaspoon of Cajun seasoning, 1/2 teaspoon of Italian seasoning, 1/2 teaspoon of onion powder, 1/2 teaspoon of garlic powder, 1/4 teaspoon of paprika, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Stir well to combine.

Bring the sauce mixture to a gentle simmer, then reduce heat to low and let it simmer for 5 minutes to allow the flavors to meld.

Return the cooked chicken and sausage to the pan with the simmering sauce. Add the cooked rigatoni pasta and the peeled shrimp. Stir gently to combine all ingredients.

Continue to cook, stirring occasionally, until the shrimp turn pink and are cooked through, about 3-5 minutes.

Remove the pan from the heat. Stir in the shredded Monterey Jack cheese until it is fully melted and incorporated into the sauce, creating a creamy texture.

Taste and adjust seasoning if necessary. Garnish with fresh chopped parsley before serving hot.
