Toast 8 slices of sourdough bread until golden and crisp. The bread should be lightly toasted to avoid tearing the roof of your mouth.

In a small bowl, add the 2 ripe avocados. Squeeze 4 to 8 teaspoons of fresh lemon juice over the avocado. Add 4 pinches of salt and 4 pinches of red chili flakes. Mash the avocado with the lemon juice, salt, and red chili flakes using a fork until creamy but slightly textured.

Spread 4 to 8 tablespoons of mayonnaise evenly on 4 slices of the toasted sourdough bread.

Spread the mashed avocado mixture on the remaining 4 slices of toasted sourdough bread.

On each mayonnaise-covered bread slice, layer 3 to 4 slices of turkey.

Add a handful of shredded lettuce on top of the turkey on each sandwich.

Grind some fresh black pepper over the lettuce on each sandwich.

Add 2 to 3 tablespoons of sliced banana peppers on top of the lettuce on each sandwich.

Take a small handful of salt & vinegar potato chips for each sandwich. Crush them in your hand directly over the sandwich, sprinkling them generously on top of the banana peppers.

Place the avocado-covered bread slice on top of the other half of each sandwich. Press gently to secure the ingredients.

Slice each sandwich in half. You can cut it straight across or diagonally, as preferred.

Serve immediately while the bread is crisp and the chips still have crunch.
