Prepare the bagel dough following your plain bagel recipe. This includes fermenting, dividing, shaping, and proofing the dough as you normally would for plain bagels. This step accounts for the majority of the passive time.

Once the dough has proofed, gently stretch out the center hole of each bagel using a bagel tool or your fingers to ensure it doesn't close up during boiling and baking.

Bring a large pot of water to a rolling boil. Add honey to the water, using the same ratio you would for your plain bagels. This honey water will be used for boiling the bagels.

Carefully place the shaped bagels into the boiling honey water. Boil each bagel for 30 seconds on one side, then flip it and boil for another 30 seconds on the other side. Remove the boiled bagels with a slotted spoon and place them on a wire rack to drain slightly.

While the bagels are draining, prepare the cinnamon sugar topping. In a shallow bowl, combine the 50 g of sugar in the raw, 100 g of white sugar, and 1 tablespoon of cinnamon. Mix all the ingredients together thoroughly until well combined.

Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper.

Take one boiled bagel and generously brush it all over with melted butter, ensuring the butter gets into the center hole as well.

Immediately place the buttered bagel into the cinnamon sugar mixture. Gently shimmy the bowl around to coat one side of the bagel. Flip the bagel over and shimmy it again to ensure both sides are fully coated. Use a finger to push some of the cinnamon sugar mixture into the center hole.

Transfer the coated bagel to the prepared baking sheet. Repeat the buttering and coating process for the remaining bagels.

Place the baking sheet with the cinnamon sugar bagels into the preheated oven. Bake for about 16 minutes, or until the bagels are golden brown and the cinnamon sugar has caramelized.

Once baked, remove the bagels from the oven. Allow them to cool slightly on a wire rack before serving. These 'dessert bagels' are delicious served with a fruit dip or cream cheese.
