In a large bowl, combine the all-purpose flour, baking powder, baking soda, salt, and granulated sugar. Whisk these dry ingredients together thoroughly until well combined.

In a separate medium bowl, crack the large egg, then add the melted butter and buttermilk. Whisk these wet ingredients until they are well combined.

Pour the wet ingredients mixture into the bowl with the dry ingredients. Gently combine the wet and dry ingredients using a spatula. It is critical NOT TO OVERMIX the batter; mix just enough until combined, and some lumps may still remain. Let the batter rest for 10 minutes.

While the batter is resting, lightly butter a hot pan or griddle and place it over medium heat. Once the pan is hot, pour portions of the pancake batter onto the pan, using approximately 1/4 cup of batter per pancake.

Cook the pancakes on medium heat. When bubbles begin to appear on the surface of the pancakes and the edges look set, it's time to carefully flip them.

Continue cooking the pancakes on the second side until both sides are golden brown and the pancakes are cooked through. Remove from heat and transfer to a plate.

Repeat steps 4-6 with the remaining batter. Stack the warm pancakes and serve immediately with your favorite toppings, such as additional butter and maple syrup.
