Slice the beef as thinly as possible. In a bowl, mix the sliced beef with the beef marinade ingredients (3 tablespoons soy sauce, 1 tablespoon sugar, 1/2 tablespoon minced garlic, 1 tablespoon sesame oil, and black pepper). Let it rest for 10 minutes.

Thinly slice the onion, carrot, and leek.

Bring a pot of water to a boil. Blanch the Korean rice cakes in the boiling water for 1 minute. Drain the rice cakes thoroughly, then toss them with 2 tablespoons soy sauce and 1 tablespoon sesame oil.

Heat a pan with a little oil over medium-high heat. Add the thinly sliced onion, carrot, and leek to the pan and stir-fry until the onion turns slightly translucent.

Add the marinated beef to the pan with the vegetables. Stir-fry until the beef is about 90% cooked. Then, add 100 ml water and the seasoned rice cakes to the pan.

Stir in the sauce ingredients: 2 tablespoons oyster sauce, 1 tablespoon soy sauce, and 1 tablespoon corn syrup (or 1/2 tablespoon honey). Simmer the mixture, stirring occasionally, until the sauce reduces and thickens.

Taste the Gungjung Tteokbokki and adjust the seasoning if needed by adding a little more soy sauce or oyster sauce to your preference. Once the liquid has mostly cooked down and the sauce coats the ingredients, it is done. Top with sesame seeds if desired before serving.
