In a medium mixing bowl, combine the peanut butter, chili crisp, soy sauce, agave syrup, and sesame oil. If using, add the rice vinegar. Mix all the sauce ingredients thoroughly with a spoon until well combined and smooth.

Bring 6 cups of water to a rolling boil in a medium pot over high heat.

Once the water is boiling, add the ramen noodles (discarding the seasoning packets). Cook according to package instructions, typically 3 to 4 minutes, until al dente. Do not overcook.

Before draining the noodles, carefully scoop out 2 to 3 tablespoons of the hot noodle cooking water and add it to the prepared peanut sauce. Mix well to slightly thin out the sauce.

Drain the cooked noodles thoroughly. Add the drained noodles directly into the bowl with the thinned peanut sauce.

Using chopsticks or tongs, toss and mix the noodles until they are evenly coated with the spicy peanut sauce.

Divide the noodles among serving bowls. Garnish each serving with freshly sliced scallions and a drizzle of additional chili oil for extra flavor and spice. Serve immediately.
