Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned and no longer pink, about 5-7 minutes.

Drain any excess grease from the pot. Add the diced yellow onion and cook until softened, about 3-4 minutes.

Stir in the minced garlic and cook for 1 minute until fragrant.

Sprinkle the all-purpose flour over the beef and onion mixture. Stir well and cook for 1 minute, allowing the flour to cook out.

Gradually pour in the beef broth, stirring constantly to prevent lumps. Add the egg noodles, Worcestershire sauce, Dijon mustard, dried thyme, salt, and black pepper. Stir to combine.

Bring the mixture to a boil, then reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until the noodles are tender, stirring occasionally to prevent sticking.

Remove the pot from the heat. Stir in the softened cream cheese cubes until fully melted and the sauce is creamy and smooth.

Taste and adjust seasoning as needed. Garnish with fresh chopped parsley before serving.
