In a large non-stick skillet, cook the diced Trader Joe's Pancetta over medium heat until crispy, about 5-7 minutes. Remove the pancetta with a slotted spoon and set aside on a paper towel-lined plate, leaving the rendered fat in the skillet.

While the pancetta cooks, crack the Organic Pasture Raised Large Brown Eggs into a medium bowl. Add the half and half, sea salt, and freshly ground black pepper. Whisk vigorously until the yolks and whites are fully combined and slightly frothy.

Melt the unsalted butter in the same skillet with the pancetta fat over medium-low heat.

Pour the egg mixture into the skillet. Let the eggs sit undisturbed for about 30 seconds until the edges just begin to set.

Using a rubber spatula, gently push the cooked edges of the eggs towards the center, tilting the pan to allow uncooked egg to flow underneath. Continue to cook, gently folding and pushing the eggs, until they are mostly set but still slightly moist and creamy.

Remove the skillet from the heat. Stir in the crispy pancetta and finely chopped fresh chives. Serve immediately.
