In a medium bowl, combine the cut chicken pieces with 1 tablespoon soy sauce, cornstarch, and 1 teaspoon sesame oil. Toss to coat evenly and set aside to marinate while you prepare the vegetables and sauce.

In a separate small bowl, whisk together all the peanut sauce ingredients: creamy peanut butter, 1/4 cup soy sauce, rice vinegar, honey, 1 teaspoon sesame oil, and sriracha. Add 2 tablespoons of water and whisk until smooth. If the sauce is too thick, add more water, 1 tablespoon at a time, until it reaches your desired consistency.

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of olive oil to the same skillet. Add the broccoli florets, red bell pepper, and carrots. Stir-fry for 3-5 minutes until the vegetables are crisp-tender.

Add the minced garlic and grated ginger to the vegetables and stir-fry for 1 minute until fragrant.

Return the cooked chicken to the skillet with the vegetables. Pour the peanut sauce over the chicken and vegetables. Toss everything together until well coated and heated through, about 1-2 minutes.

Serve the chicken stir-fry immediately over cooked rice. Garnish with sliced green onions and chopped peanuts, if desired.
