Pour the chicken broth into the Dutch oven. Add the fresh thyme sprigs, fresh rosemary sprigs, and the sliced lemon to the broth mixture. Bring to a gentle simmer, scraping up any browned bits from the bottom of the pot.

Add the prepped and seasoned potatoes and carrots into the Dutch oven, spreading them evenly across the bottom. Place the seared chicken thighs on top of the vegetables. Cover the Dutch oven with its lid.

Transfer the covered Dutch oven to the preheated oven and bake for 30-35 minutes.

Carefully remove the lid from the Dutch oven and continue to bake for another 10-15 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the vegetables are tender.
