In a medium bowl, combine the thin sliced steak with 4 tablespoons of soy sauce, 1 teaspoon of baking soda, 2 grated garlic cloves, 2 teaspoons of grated ginger, 1 teaspoon of sesame oil, and 1 tablespoon of cornstarch. Mix thoroughly to ensure the beef is evenly coated. Set aside to marinate for at least 15 minutes.

In a separate small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of sesame oil, 1/2 teaspoon of white pepper, 2 teaspoons of rice vinegar, 1/2 tablespoon of brown sugar, and 2 tablespoons of water. Mix until the brown sugar is fully dissolved and the sauce is well combined.

Bring a large pot of water to a rolling boil. Add the 2 portions of udon noodles and cook according to package instructions until they are tender. Drain the noodles well and set them aside.

Heat 2 tablespoons of oil in a large pan or wok over medium-high heat. Add the whites of the 2 green onions, 2 minced garlic cloves, and 1 teaspoon of minced ginger. Sauté for about 30 seconds, stirring constantly, until the aromatics are fragrant.

Add the marinated beef to the pan in a single layer if possible. Cook for 2 to 3 minutes, stirring occasionally, until the beef is browned and cooked through. Remove the cooked beef from the pan and set it aside.

If the pan appears dry, add 1 tablespoon of additional oil. Add the cooked udon noodles to the pan. Pour the prepared sauce over the noodles. Toss everything together, ensuring the noodles are thoroughly coated in the sauce.

Return the cooked beef to the pan with the noodles and sauce. Toss everything together and continue to cook for another 1 to 2 minutes, stirring constantly, until the sauce has thickened slightly and all ingredients are heated through.

Transfer the Beef Yaki Udon to serving plates. Garnish generously with the green parts of the remaining 2 green onions and a sprinkle of sesame seeds. Serve immediately.
