Thinly slice the chuck roast. Season the thinly sliced beef generously with 1 teaspoon of salt and 1/2 teaspoon of freshly ground black pepper.

Heat 2 tablespoons of butter or olive oil in a large, heavy-bottomed pan or Dutch oven over high heat until shimmering. While the beef simmers, cook the 1 pound of wide egg noodles according to package directions in a separate pot of boiling, salted water until al dente. Drain the noodles well.

Add the drained noodles directly to the pan with the beef and sauce. Stir to combine thoroughly, ensuring the noodles are well coated.

Add 1 cup of shredded white cheddar cheese and 1 cup of shredded Monterey Jack cheese to the noodle and beef mixture. Stir continuously over low heat until the cheese is completely melted and the sauce becomes creamy and smooth.
