Add the eggs one at a time, beating on low speed after each addition just until the yolk disappears. Add the extra egg yolk and beat until just combined. Be careful not to incorporate too much air into the batter, as this can cause cracks.

Pour the cheesecake filling over the cooled crust in the springform pan. Place the springform pan into a larger roasting pan.

Carefully pour hot water into the roasting pan, reaching about halfway up the sides of the springform pan. This creates a water bath (bain-marie) which helps the cheesecake cook evenly and prevents cracking.

Bake for 60-75 minutes, or until the edges are set but the center still jiggles slightly when gently shaken. Do not overbake.

Turn off the oven and leave the cheesecake in the water bath with the oven door ajar for 1 hour. This slow cooling process helps prevent cracking.

Remove the cheesecake from the oven and water bath. Carefully remove the foil. Let cool completely on a wire rack at room temperature.
