Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking soda, and salt. Set aside.

In a separate medium bowl, combine the mashed bananas, beaten eggs, melted butter, ube extract, ube halaya, and vanilla extract. Mix well until thoroughly combined and the ube is evenly distributed.

Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; a few lumps are okay.

Pour the batter into the prepared loaf pan, spreading it evenly.

Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. The top should be golden brown and the edges set.

Remove the loaf pan from the oven and let it cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
