Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.

Add the chopped yellow onion to the pot and cook until softened, about 5 minutes.

Stir in the minced garlic, chili powder, cumin, smoked paprika, dried oregano, salt, and black pepper. Cook for 1 minute, stirring constantly, until fragrant.

Pour in the canned diced tomatoes (undrained), rinsed and drained kidney beans, canned tomato sauce, and beef broth. Stir well to combine all ingredients.

Bring the chili to a simmer, then reduce the heat to low, cover, and let it cook for at least 30 minutes, stirring occasionally, to allow the flavors to meld. For a richer flavor, you can simmer it longer, up to 1 hour.

Taste and adjust seasonings as needed. Serve hot, garnished with shredded cheddar cheese, a dollop of sour cream, and fresh cilantro, if desired.
