Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper.

Unroll the sheet of puff pastry onto the prepared baking sheet or a clean work surface. If using a standard rectangular sheet, cut it in half lengthwise.
On one half of the puff pastry, generously sprinkle the grated mozzarella cheese, leaving a small border around the edges.

Evenly sprinkle the chopped fresh parsley over the mozzarella cheese.

Carefully place the other half of the puff pastry on top of the cheese and parsley-covered half, aligning the edges. Gently press down to seal the layers.

Using a sharp knife or pizza cutter, cut the layered pastry into approximately 1-inch wide strips. You should get about 10-15 strips depending on the size of your pastry sheet.
Take each pastry strip and wrap it tightly with a slice of bacon, spiraling the bacon around the pastry from one end to the other. Ensure the bacon is snug to prevent it from unraveling during baking.
Arrange the bacon-wrapped pastry sticks on the prepared baking sheet, leaving a little space between each one.

Bake for 25 minutes, or until the puff pastry is golden brown and puffed, and the bacon is crispy. The cheese inside should be melted and gooey.

Remove from the oven and let cool for a few minutes before serving. Garnish with additional fresh herbs if desired.
