Prepare the Fancy Sauce: In a small bowl, combine the mayonnaise, ketchup, hot sauce, and fish sauce. Whisk until well combined. Set aside.

Preheat a heavy cast iron pan or griddle over medium-high heat. Generously butter the cut sides of the potato rolls with some of the melted butter.

Place the buttered potato rolls, cut-side down, onto the hot pan. Using a sturdy spatula, smash the buns flat. Toast them on both sides until golden brown and crispy. Remove from pan and set aside.

Add a small amount of butter to the hot pan if needed. Place one or two balls of ground beef onto the hot pan, ensuring not to overcrowd. Immediately use two spatulas to smash each beef ball as flat as possible, creating a thin patty with lacy edges.

Season the patties generously with salt and black pepper. Immediately place a portion of the thinly sliced red onions on top of each cooking patty, followed by a slice of American cheese.

Cook until the cheese is melted and the patty is cooked through with a deep brown crust on the bottom. Use a spatula to carefully scrape up the patty, ensuring to get all the 'crusty goodness' from the pan. Place the cooked patty onto one of the toasted potato roll halves, with the toasted side facing outwards.

Repeat steps 4-6 for any remaining beef balls and buns. Once all patties are cooked, place the other toasted bun half on top of each patty, with the toasted side facing outwards.

Place the assembled burgers back into the hot pan for a final toast, warming the entire burger and further crisping the bun. Cook for about 1 minute per side.

Serve the Crust Burgers hot, with the Fancy Sauce on the side for dipping.
