Wash your cucumbers thoroughly, then slice off both ends. Place each cucumber between a pair of wooden chopsticks to prevent cutting all the way through. Slice the cucumber at an angle all the way down, creating accordion-like cuts. Flip the cucumber over and repeat the angled slicing on the other side.

Transfer the sliced cucumbers into a medium-sized bowl. Sprinkle the sea salt evenly over the cucumbers and toss well to coat. Set the bowl aside for 5 to 10 minutes to allow the salt to draw out excess water. After the resting period, rinse the cucumbers thoroughly under cold water to remove the excess salt and drain them very well.

In a separate small bowl, combine the Chinese black vinegar, soy sauce, sesame oil, sugar or sweetener of choice, minced garlic, and chilli oil (to your desired taste). Whisk the ingredients together until well combined. Pour this prepared sauce over the drained cucumbers and toss well to ensure all the cucumber pieces are coated.

Transfer the sauced cucumbers onto a serving plate. Spoon any remaining sauce from the bowl over the cucumbers. Garnish generously with toasted sesame seeds and, if desired, a little extra chilli oil for an added kick. Serve immediately and enjoy!
