Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

In a large bowl, combine the ground beef, grated onion, chopped fresh parsley, minced garlic, ground cumin, ground coriander, paprika, cayenne pepper, salt, and black pepper. Mix thoroughly with your hands until all ingredients are well incorporated, but do not overmix.

Divide the beef mixture into 12-16 equal portions. Shape each portion into an oval or cylindrical kofta, about 3-4 inches long and 1 inch thick. Place the shaped koftas on the prepared baking sheet, leaving some space between each.

Brush the tops of the koftas lightly with olive oil. This will help them brown nicely in the oven.

Bake the koftas in the preheated oven for 20-25 minutes, or until they are cooked through and nicely browned. Flip them halfway through cooking for even browning.

While the koftas are baking, prepare the yogurt sauce. In a medium bowl, combine the plain Greek yogurt, finely diced cucumber, chopped fresh mint, minced garlic, lemon juice, salt, and black pepper. Stir until well combined.

Once the koftas are cooked, remove them from the oven. Serve immediately with the prepared yogurt sauce on the side. These are great with pita bread, rice, or a fresh salad.
