In a medium mixing bowl, combine the drained tuna, mayonnaise, and Dijon mustard. Mix well with a fork until thoroughly combined.

Add the finely diced red onion and finely diced celery to the tuna mixture. Stir until all ingredients are evenly distributed.

Heat a large skillet or non-stick pan over medium heat. Add about 1 tablespoon of butter and allow it to melt and coat the pan.

Place one large tortilla onto the buttered pan. Sprinkle 1/4 cup of shredded cheddar cheese evenly over one half of the tortilla.

Evenly spread the prepared tuna mixture over the cheddar cheese on that same half of the tortilla.

Sprinkle 1/4 cup of shredded mozzarella cheese over the tuna mixture.

Carefully fold the empty half of the tortilla over the filled half, creating a half-moon shape for your quesadilla.

Cook the quesadilla for 3 to 4 minutes per side, or until both sides are golden brown and the cheese is melted and bubbly. Flip gently with a spatula to ensure even cooking.

Remove the cooked quesadilla from the pan. Place it on a cutting board and slice it in half or into wedges.
