Preheat the oven to 325°F (160°C).

Prepare a cupcake pan by lining it with cupcake liners.

In a bowl, combine the melted butter, 2 tablespoons of sugar, and the crushed Biscoff cookies (or graham crackers). Mix until thoroughly combined. The mixture should have the consistency of wet sand.

Add spoonfuls of the cookie mixture into each cupcake liner and press down firmly with the back of a spoon to form the crust.

In a separate bowl, using a hand mixer, mix the softened cream cheese, Greek yogurt (or sour cream), 45 grams of sugar, vanilla extract, and egg until the mixture is smooth and without any lumps.

Spoon the cheesecake mixture on top of the prepared cookie base in each cupcake liner.

Bake for 25 minutes.

Once baked, remove the cheesecakes from the oven and allow them to cool completely at room temperature. Then, refrigerate for at least 3 hours to set.
