Boil the pasta in salted water until it is almost al dente. Before draining, reserve about 50ml of the pasta water.

While the pasta is cooking, heat some olive oil in a large pan over medium-low heat. Add the finely diced red onion and fry for 5 to 7 minutes, or until softened and golden. Season with salt and pepper.

Add the diced bacon to the pan with the onions and cook for another 3 to 4 minutes, stirring occasionally, until both the onions and bacon are golden and the bacon is crispy.

Return the drained pasta to the pot. Add the onion and bacon mixture, the heavy cream, and a generous splash of the reserved pasta water. Stir constantly to combine everything.

Remove the pot from the heat. Immediately stir in the whisked egg and grate in plenty of Parmesan cheese. Continue to stir constantly to create a silky sauce. If the sauce is too thick, add a little more cream or reserved pasta water until it reaches your desired consistency. Taste and adjust seasoning as needed.

Serve immediately with a generous grinding of fresh coarse black pepper and additional grated Parmesan cheese, if desired. Enjoy!
