Line a baking sheet with parchment paper and set aside.

Take two banana slices and spread approximately 1 teaspoon of peanut butter between them, forming a small sandwich. Repeat with the remaining banana slices and peanut butter until all are used.

Arrange the banana-peanut butter sandwiches in a single layer on the prepared parchment-lined baking sheet. Place the tray in the freezer until the banana sandwiches are firm, about 1 hour.

Once the banana bites are firm, prepare the chocolate coating. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring well after each, until the chocolate is completely melted and smooth. Alternatively, melt over a double boiler.

Remove the frozen banana bites from the freezer. Using a fork or a skewer, dip each frozen banana bite into the melted chocolate, ensuring it's fully coated. Allow any excess chocolate to drip off.

Place the chocolate-covered bites back on the parchment-lined baking sheet. Immediately sprinkle each bite with a pinch of flaky sea salt.

Return the tray to the freezer until the chocolate coating has hardened, about 30 minutes. Once hardened, the treats are ready to enjoy. Store any leftovers in an airtight container in the freezer.
