Remove the chicken breast from the fridge and dice it into small, uniform pieces.

Season the diced chicken generously with Sweet Chipotle seasoning. Mix by hand to ensure the chicken is evenly coated.

Place the seasoned chicken into a pan (or electric skillet) over medium-high heat. Pan fry for 3 to 5 minutes on each side, until cooked through and slightly browned.

While the chicken cooks, prepare the sauce. In a small bowl, combine the 30 grams of light mayonnaise, 20 grams of diced jalapeños, and 20 grams of jalapeño juice.

Add paprika and garlic powder to the sauce mixture, to taste. Mix all ingredients with a fork until the sauce is thick and well combined.

Once the chicken is cooked, remove it from the pan. Place one burrito-sized tortilla into the pan over medium heat.

Sprinkle 15-50 grams of fat-free mozzarella cheese over one half of the tortilla.

Sprinkle 15-50 grams of fat-free cheddar cheese over the same half of the tortilla, on top of the mozzarella.

Place the cooked chicken on top of the cheese on the same half of the tortilla.

Carefully fold the tortilla in half, pressing down gently to secure the filling.

Cook the quesadilla until both sides are toasted golden brown and the cheese is melted and bubbly. This usually takes 2-3 minutes per side.

Remove the quesadilla from the pan and place it on a cutting board. Cut it into 4 equal slices.

Serve immediately and enjoy your high-protein Taco Bell inspired quesadilla!
