Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil. Place 12 hash brown patties evenly spaced on the prepared baking sheet.

Place the baking sheet with hash browns into the preheated oven and bake for 15-20 minutes, or until golden brown and crispy.

While the hash browns are baking, crack 12 whole eggs into a large mixing bowl. Add 1 cup of liquid egg whites to the bowl.

Whisk the whole eggs and liquid egg whites together until thoroughly combined and the yolks are fully incorporated.

Once the hash browns are cooked, carefully remove them from the oven. Using a spatula, transfer 2 cooked hash brown patties into each of the 6 individual meal prep containers.

Add approximately 5 ounces of Aldi BBQ pork shoulder on top of the hash browns in each container.

Pour the whisked egg mixture evenly over the pork shoulder and hash browns in each container, filling them.

Place the filled meal prep containers onto a baking sheet. Carefully transfer the baking sheet with the containers into the oven (still at 400°F/200°C). Bake for 15-20 minutes, or until the eggs are set and slightly golden on top.

Once baked, carefully remove the baking sheet with the containers from the oven using oven mitts.

Sprinkle cotija cheese on top of each finished breakfast bake before serving or storing.
