Preheat your oven to 425°F (220°C).

Wash and scrub the potatoes thoroughly. You can peel them if you prefer, but it's optional.

Cut each potato in half lengthwise, then cut each half into 3–4 wedges.

Pat the potato wedges thoroughly dry with a clean towel. This step is crucial for achieving crispy wedges.

In a large bowl, combine the dried potato wedges with the olive oil, minced garlic (or garlic powder), paprika, dried oregano or Italian seasoning, salt, and black pepper. Toss everything together until the potatoes are evenly coated.

If using, add the grated Parmesan to the bowl and toss again to distribute evenly.

Line a large baking tray with parchment paper. Arrange the seasoned potato wedges in a single layer on the prepared tray, ensuring they are not overcrowded. Try to place them skin-side down if possible.

Bake in the preheated oven for 35–40 minutes, flipping the wedges halfway through the baking time. Continue baking until they are deeply golden brown and crispy on the edges.

Once baked, remove from the oven. Sprinkle with fresh parsley for garnish and add a little extra salt if needed, to taste.
