Add the cottage cheese, vanilla, and maple syrup to a blender. Blend until the mixture is completely smooth. Measure out 2 tablespoons of this blended wet mixture and set it aside in a small bowl for the icing later.

Starting from the widest side, carefully roll the dough tightly into a log. Using a sharp knife, slice the log into individual cinnamon rolls, each approximately 1 inch thick.

Preheat your oven to 350°F. Arrange the cut cinnamon rolls onto a baking sheet, leaving a little space between each roll. Bake for 15 minutes, or until lightly golden brown and cooked through.

While the cinnamon rolls are baking, take the 2 tablespoons of reserved wet mixture and add the powdered sugar to it. Mix thoroughly with a spoon or small whisk until a smooth, pourable icing is formed.
