In a medium-sized heavy-bottomed saucepan, combine the sweetened condensed milk, unsweetened cocoa powder, and 1 tablespoon of unsalted butter. Stir well to combine all ingredients.

Place the saucepan over medium-low heat. Cook, stirring constantly with a wooden spoon or silicone spatula, making sure to scrape the bottom and sides of the pan to prevent sticking. The mixture will thicken and pull away from the sides of the pan.

Continue cooking until the mixture is very thick and when you tilt the pan, it comes away from the bottom in a single mass. A good test is to run your spoon through the middle; if it takes a few seconds for the mixture to come back together, it's ready. This usually takes about 10-15 minutes.

Remove the pan from the heat and immediately transfer the brigadeiro mixture to a buttered plate or shallow dish. Spread it out slightly to help it cool faster.

Allow the mixture to cool completely at room temperature for at least 1 hour, or in the refrigerator for about 30 minutes, until it's firm enough to handle.

Once cooled, lightly grease your hands with a small amount of butter. Scoop out about 1 tablespoon of the brigadeiro mixture and roll it into a small ball, about 1 inch in diameter.

Place the chocolate sprinkles in a shallow bowl. Roll each brigadeiro ball in the sprinkles until it is fully coated.

Place the finished brigadeiros in mini paper or foil candy cups, if desired. Serve immediately or store in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 1 week.
